I checked and there is no legal allowance for driving after it expires. If you drive after it expires it is illegal. I agree that if you carry a copy of your future appointment then officers of Garda Civil may choose to turn a blind eye, but it is their choice. If you have an accident then that is another matter, I would imagine your insurance company will be only to pleased to draw your attention to the clause in your policy that states you must have a valid ITV, when they look for reasons not to pay out.

Every day our clients keep asking the same question: "once the ITV of my vehicle expires, how long do I have to take it to the ITV Station?" or "how long can I drive without being fined?"
There is a rumour that you have ONE month after the ITV expires to carry out your ITV test, but it is totally false. We are sorry to inform that once the deadline marked in the back side of the itv card expired, you take the risk of being fined.
The law states a vehicle cannot be driven with expired ITV and doesn´t mention any exception to this regulation. Please do not wait until the last day and make your appointment in advance.
